Serves 6-8


To serve


  1. Prepare all ingredients as above
  2. Mix together the halloumi, onion, chilli, garlic, mint and lemon rind
  3. Wrap the grated courgettes in a clean tea towel and squeeze out as much water as possible, then add to the mix
  4. Fold in the eggs and breadcrumbs, mix together, cover with cling film and leave in fridge for 10 mins (minimum)
  5. Using hands, shape the mixture into egg-sized patties, adding more breadcrumbs if the mix is very sticky
  6. Toss patties lightly in plain flour
  7. Fry in light oil over a medium heat (2 - 3 mins each) until golden brown
  8. Serve with Harissa and lemon wedges

(NB: I serve with a spiced quinoa/broccoli salad and loads of greens)
